One of the best, if not the best olive oil in the world! Organic and made with love and passion for each one of the trees that are a unique combination and experimentation of many many varieties of olives. The producer, Iris, knows each one of her trees and looks after them every single day from sunrise to sunset.... I have been tasting these oils for years and, every year, they get better and better. There is a certain fashion for very bitter and pungent oils that are sometimes overpowering. These oils are not in that category. They are always balanced, pleasant and versatile - in the sense that they go well with pretty well any dish. I find notes of raw peas, fresh salad leaves, tomato leaves, walnut, avocado, raw cabbage, courgettes and Swiss chard. So, all in all, fairly complex!
